Kalita Wave (1 cup) - Total brew time 2-4 minutes

Metal and grooved in build, the Kalita Wave with its memorable design brews through a paper filter on a flat-bed (as opposed to the cone of the V60) for what some consider a more consistent extraction. Due to the flat bed allowing for a partial immersion, this method produces a balanced yet intricate flavour somewhere in between a French Press and Hario V60.

Requirements:

Kalita wave
Paper filter
Scale
Kettle
Grinder
Timer
1 cup (12g of beans)

Kalita Wave in copper

Step 1

Boil water using kettle. Whilst waiting, weigh and grind your coffee to a consistency similar to table salt. We recommend using 12g of coffee beans.

Note: As a base we advise a brew ratio of 12g coffee to 200g water.

Once boiled, add your filter to the Kalita Wave and rinse with hot water to preheat the Kalita Wave and remove the paper flavour.

Step 2

Once the kettle is boiled, add your filter to the Kalita Wave and rinse with hot water to preheat the Kalita Wave and remove the paper flavour.

Step 3

Add the ground coffee to the Kalita Ware keeping the grounds at the centre of the cone. Shake to keep the coffee bed level and place Kalita Wave onto scale and tare.

Step 4

Start timer and add 50g of hot water to allow for bloom (degassing process).

Note: Ensure coffee grounds are fully immersed in water.

Step 5

At 0.30 add up to 125g of hot water. Pause an allow water to drain. At 1.00 add up to 200g of hot water.

Step 6

Wait until Kalita Wave is fully drained and remove the Kalita Wave. Enjoy your cup of coffee!

Note: Aim for a flat bed of wet grounds that signifies even extraction.
